I suffer from Rheumatoid Arthritis and have been researching bone broth as an addition to my daily diet! Bone broth has been known to provide collagen to maintain strong bones and gelatin to promote elasticity in joints. The other benefits are the amino acids that are present and reduce inflammation and aid digestion. There are many articles available on the internet to read more about the benefits.
The recipe is straightforward.I use beef bones from the store and if you don’t see them in the meat section ask the butcher. I roast the bones at 400F with some apple cider vinegar for 30 minutes. I toss the bones with the juices into the crockpot, cover with water and add whatever vegetables I have available. I cook the broth for at least 24 hours and strain the bones and vegetables. I store some of the broth in the freezer and have one cup everyday! If you are trying to watch your weight, I have it at lunchtime and find it very filling.
